"When I was in Jamaica, we went to take my children to a mountain, and the people would just grill their chicken or pork. The Jamaican chicken, it's so wonderful. So, I asked them how to make it -- they didn't tell me – so I bought a book and realized what they did. They use garlic, jalapeno pepper, and they roast them and then puree them in honey and other spices. So, I start using roasted garlic and jalapeno pepper on rack of lamb, sometimes on fish, and also I use soy sauce because it gives the flavor. That's one influence for me, because it's such a concentrated, wonderful flavor."
